If you haven’t tried my Vegan Chocolate cake with ganache, you need to give that one a try before trying this cake.  This Vegan Marble Bundt Cake is an absolute show stopper and uses the same ingredients as the vegan chocolate cake but with slightly different steps to give it the marble effect.  The hardest part for me when I bake this cake is the wait for it to cool down before I can cut into it.  I can hardly wait to see all the swirls inside once its cut in.  It’s really so exciting for the kids and also me!

Key steps to make Vegan Marble Bundt Cake:

There are just a couple of key steps to making this cake.

Making 2 separate batters– We need two separate batters, vanilla and chocolate to make the marble cake.  So instead of adding cocoa powder to the entire batter, we are going to make a vanilla base first, separate half of the batter in another bowl and then add cocoa powder to one of the bowls.

Layering chocolate and vanilla batters– After properly greasing the bundt pan, make four layers (two each), alternating between cocoa and vanilla batters.  I find that using a big ladle is the easiest way for me to spoon the batter in the cake pan.  If you would like, you can make six layers also.  Sometimes to make a marble effect, people swirl a chopstick through the batter after layering it.  But for this particular cake, I like the distinct layers and the swirls that naturally form so I don’t use the chopsticks.

Baking the Cake:

I have used a bundt cake pan to bake the marble cake.  But you can use a regular 9-10 inch pan to make it.  The process will be the same and it will look equally stunning when you cut into it.  Since I have doubled the recipe from the original Vegan chocolate cake, the baking time is 52-55 minutes.  In case you chose to half the recipe, the baking time will go down to 32-35 minutes. 

 This cake is really so easy to put together and the end result is extremely stunning.  I love slicing the Vegan Marble Bundt Cake and taking it to picnics and get togethers.  Its always a crown pleaser.

Ingredients

  • 3 cups All purpose flour

  • 2 cups White Sugar

  • 1/4 cup Unsweetened cocoa powder

  • 2 teaspoon Baking Soda

  • 1 teaspoon Salt

  • 2/3 cup any unflavored cooking oil ( I use Avocado oil)

  • 2 cups water

  • 2 teaspoons white vinegar

  • 2 teaspoons vanilla extract

  • 1 tablespoon powdered sugar for dusting (optional)

Method

  • Preheat oven to 350°F.
  • Mix the flour, sugar, baking soda and salt into a bowl. Pour the oil, water, vanilla extract and vinegar into a separate bowl and mix together. Pour the wet ingredients into the dry ingredients and mix well.
  • Remove half of the batter in a separate container (just eye ball it). To one of the containers add ¼ cup cocoa powder and mix well.
  • Prepare a 10-12 cup bundt pan by spraying and greasing well.
    Using a ladle, pour half of the brown batter (with cocoa powder) in the bundt pan. Layer it with half of the white batter. Repeat the process 2 more times till the batter is all poured. Be gentle while pouring.
  • Bake in the pre-heated oven for 52-55 minutes, until a tooth pick inserted into the center of the cake comes out clean. Take the pan out of the oven and cool for 10 minutes before inverting it and cooling completely on a wire rack.
  • When completely cooled, dust with some powdered sugar if desired.

Tips

  • Completely cooled cake can be stored in an airtight container at room temperature for a day or in the refrigerator for up to a week.
