My dear friend Sonia made this mango salad for me years ago and I loved it! The sweetness from the Mangoes goes really well with the sharp red onions and slightly sweet and tart cherry tomatoes.   • 3 ripe Mangoes
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 4 tablespoons cilantro, finely chopped
  • 5 tablespoons lemon juice
  • 3 tablespoons Olive oil
  • 1/2 teaspoon cumin powder
  • salt and pepper

  1. Peel and cut the mango into 1-inch dice.
  2. In a salad bowl mix mango, cherry tomatoes, red onion, and cilantro.
  3. Mix the dressing ingredients, lemon juice, olive oil, cumin powder, salt, and pepper in a mason jar, shake, and drizzle over the salad.
  4. Mix gently and serve immediately or cover the bowl with plastic wrap and refrigerate for up to 4 hours.
