This Stuffed mini peppers with paneer recipe is my favorite easy snack to make when I am entertaining a group of friends. It works well in a spread of appetizers for a dinner gathering but you can also serve it with evening tea snacks. With just 2 main ingredients and a bunch of spices from your kitchen, you can assemble a whole lot of Stuffed Mini Peppers in under 30 minutes.

This is one recipe where the possibilities are endless. I have made Indian-style filling for this recipe with paneer (Indian soft cheese) and spices. Once you learn the method, you can try different cheese and flavor combinations to stuff the peppers. You really cannot go wrong with it and no matter what, it will taste and look delicious.

In my opinion, the best peppers to use for this recipe are the mini sweet peppers. They are red, orange, and yellow in color and sold in plastic bags in the American grocery store. They are snacking peppers as they are sweet in taste and not spicy at all. When raw, they have a nice crunch, and you can just dip them in hummus or ranch dressing and snack on them. Since they are sweet, it’s not necessary to deseed them before stuffing. Because of their size, mild and sweet taste, and colors, the mini sweet peppers are the ideal peppers for this recipe.

  • 1 lb Mini Sweet Peppers
  • 2 cups crumbled or grated paneer
  • 2 teaspoons chaat masala
  • 1 teaspoon red chili powder
  • ½ teaspoon jeera powder
  • ¼ teaspoon garam masala
  • 2 tablespoons kasoori methi
  • Salt
  • Cooking spray

How to make Stuffed Mini Peppers

Follow these steps to make Stuffed Mini Peppers

  • Preheat oven to 400 degrees Fahrenheit.
  • Wash and dry the sweet mini peppers. Cut each pepper lengthwise in half. You can destem and deseed the peppers if you would like, it’s not necessary.
  • In a bowl take crumbled or grated paneer. Add all the masalas, kasoori methi, and salt and mix properly. Taste the filling and adjust the seasonings. 
  • Stuff the pepper halves generously with the paneer filling. Place the stuffed peppers on a baking tray. Spray with cooking spray. 
  • Bake in the preheated oven for 18-20 minutes, till the peppers are a bit soft and the paneer filling is light golden. 
  • Serve the peppers hot or at room temperature.

These tips will help you create the best version of this stuffed mini peppers recipe:

  • You can use either homemade or store bought paneer for this recipe. If using homemade paneer, you can crumble it or for the firmer texture of the store bought paneer, you can grate it, either works well for this recipe.
  • The paneer stuffing should be generously seasoned and salted.  Taste it after you mix in all the masalas.  You are seasoning the stuffing for the peppers also since the peppers have no seasoning on them.
  • Get the right amount of filling in all the pepper halves- don’t under or overstuff the peppers. 
  • You can leave the green stems on the peppers. They make for a cute presentation and people can hold on to the stems when eating and discard them later.

  • You can stuff mini sweet peppers with leftover rajma or Mexican chili beans. Add a sprinkle of cheese on it before you bake. 
  • Cream cheese and goat cheese are excellent soft cheeses that can be used to stuff the mini peppers.  Season it generously with salt, pepper, garlic and parsley or herbs of your choice. 
  • If you don’t mind stinky cheeses like blue or gorgonzola, those would also make good choices.  Just go easy on the filling. Drizzle it with honey after the peppers come out of the oven.

This recipe is vegetarian but not vegan. It’s very easy to make this recipe vegan. Firm or extra-firm tofu is a great vegan substitute for paneer. Press down the tofu for an hour to remove the excess water. Crumble or grate the tofu and use it in the recipe. 

How can I store the leftover stuffed mini peppers?

Leftover peppers can be stored in an airtight container in the refrigerator for up to 5 days.  Microwave for 45 seconds to 1 minute to reheat the peppers.
