This Palmier Cookies recipe requires only 3 ingredients and very little hands-on time but the wow factor of when it finally comes out of the oven is amazing.

- Puff Pastry
- Cinnamon powder
- Sugar
Store-bought puff pastry dough is a lifesaver. It is such a versatile ingredient made of butter and all-purpose flour. I almost always have a pack in my freezer, and it comes in handy to make so many sweet and savory dishes.
How to make Palmier Cookies
Follow these steps to make the perfect Palmier Cookies:
- Defrost the puff pastry as per package directions.
- In a bowl mix sugar and cinnamon.
- On a clean kitchen counter, spread half of the sugar. Lay the defrosted puff pastry on it. Evenly spread the remaining sugar on top of the puff pastry. Now, with the help of a large rolling pin, roll the puff pastry to approximately 13 inch X 13 inch square.
- Fold the two sides of the puff pastry towards the center so they go halfway to the middle. Fold them again so the two folds meet exactly in the middle of the dough. Then fold 1 half over the other half to resemble a closed book. This will give you 6 layers.
- If the dough has become soft and is difficult to cut, place the folded puff pastry on a cookie sheet and stick it in the refrigerator for 15-20 minutes (optional). With a sharp knife cut the folded puff pastry in ½ inch pieces.
- There will be a lot of sugar mix left on the kitchen counter after rolling and cutting the puff pastry. Gather the leftover sugar in a bowl. Dip each of the cut puff pastry piece in the sugar mix to coat it nicely.
- Line 2 cookie sheets with parchment paper and place 15 cookies on a cookie sheet.
Place the cookie sheets in the refrigerator for about 45 minutes to an hour. You can skip this step if you are in a rush. - While the cookies are in the refrigerator, preheat the oven to 450 degrees Fahrenheit.
- Bake in the preheated oven for 7-8 minutes, take it out of the oven, flip it using a spatula, and bake it again for 4-5 minutes on the second side. Carefully watch the cookies from the oven door for the last 1-2 minutes of baking time. The cookies should have a nice caramelization and should be crunchy and crisp.
- Cool the cookies on a rack. The cookies harden as they cool. Store in an airtight container.
