Motichoor laddu parfait jars

These Motichoor laddu parfait jars are a quick and easy Indian fusion dessert that you can whip up in no time.  I love small portion controlled desserts in jars or cups as they are easy to serve and great for entertaining.  You know my love for fusion desserts and how I love making Eggless Gulab Jamun Cake and Eggless Rasmalai Cake. These Motichoor laddu parfait jars are on the same lines as the fusion cakes, but much easier to put together.  They are perfect for entertaining during the Indian festive season or any other time of the year. 

What are Motichoor Laddus?

Motichoor laddus are small, delicious laddus made of gram flour, sugar and some spices and very popular in North India.  Laddu is the generic term for any small spherical dessert. In Hindi, the word “Moti” means pearls and “Choor” means crushed, meaning crushed pearls.  Gram flour batter is fried in small pearls and then dipped in sugar syrup.  It is crushed and bound into a sphere to form laddus, hence the name Motichoor Laddus. 

Whenever my mom visits us, she brings us a box of authentic Motichoor laddus from India and they taste delicious!

Layers in the Motichoor laddu parfait jars:

Bottom layer– I have used the classic Indian Parle G biscuits to layer the bottom, almost like a graham cracker crust for a cheesecake.  You can crush the biscuits using a food processor or even a sturdy ziplock bag with a rolling pin will do the job.  If Pale G biscuits are not available to you, you can use any neutral biscuits.  By the way, biscuits in India is what is called as cookies in the United states 😊

Second layer– Fresh sweetened whipped cream flavored with cardamom powder is layered next.  I provides a lot of freshness and lightness to the dessert and the color contrast between the orange Motichoor laddus and the white whipped cream is just gorgeous. 

Third Layer– Crumbled store bought Motichoor laddus.  For this recipe we are using store bought laddus. Motichoor laddus are widely available at most Indian grocery stores. 

Fourth layer– We are repeating the whipped cream layer.

Fifth (top) layer– We are repeating the crumbled Motichoor laddu layer and garnishing it. 

If you are making smaller portions in a smaller container, skip the fourth and fifth layer.

How many jars will this recipe make

I have upcycled 5 oz Oui by Yoplait jars to make these parfaits but you can use any small jars, cups or shot glasses you have.  Also feel free to reduce the number of layers depending on the size of the jar.  5 oz jars tend to be on the larger side for individual desserts so if you go with a 2-4 oz container, you can reduce the number of layers to 3, skipping the fourth and fifth layer as mentioned above. 

With the recipe, I was able to make 6, 5 oz jars of the parfait but for parties and larger gatherings, I highly recommend for you to use smaller containers like the shot glasses.  With the same proportions, you can get 10-12 shot glasses filled. 

These Motichoor Laddu parfaits are best made a few hours before you serve them.  They only take less than 30 minutes of your time to put together, a total crowd pleaser and perfect for your next festive get together!

Ingredients

  • 12 Parle G Biscuits

  • 1/4 +1/4 teaspoon Cardamom powder

  • 1 cup Heavy Whipping Cream

  • 1/4 cup Confectioner’s Sugar

  • 8 Motichoor Laddus (See note)

  • Garnishes
  • Slivered raw pistachios

  • Chandi Vark (optional)

Method

  • To make the bottom layer, crush the biscuits using a food processor. If you do not have a food processor, put the biscuits in a sturdy ziplock bag and roll a rolling pin over it. It will crush the biscuits. Remove the crushed biscuits in a bowl and mix it with ¼ teaspoon cardamom powder. Set aside
  • To make the Cream layer– Add whipping cream, confectioners’ sugar and ¼ tsp cardamom powder to a bowl. Using a stand mixer or hand held mixer, whip the cream till you get stiff peaks. Set aside.
  • Gently crumble the motichoor laddus with a fork. Set aside.
  • Have all the 3 components ready- the crushed biscuit layer, crumbled motichoor laddu layer and the cream layer. Using your preferred jars or small glasses, start layering the components. The sequence is- crushed biscuit layer, whipped cream layer and crumbled motichoor layer. To make five layers you can layer whipped cream and crumbled motichoor laddus again.
  • Garnish the last motichoor laddu layer with slivered pistachios and chandi vark (optional)
  • Refrigerate the assembled jars or glasses till you are ready to serve.

Tips

  • If the Motichoor laddus are very small, you may need 1-2 more.

    • Yes, since it has cream, you should refrigerate it after making. Take it out of the fridge right before you serve. I realized that I have not put that in the recipe so will update now.
