Orange scented madeleines

My kids love these eggless orange-scented madeleines. I make them often and before I know it, they disappear! I think its something to do with the cute, scalloped shape that is so appealing. These eggless orange-scented madeleines make a great after-school snack for the kids (or even put 1 in their lunch boxes if you wish!). My husband and I like to dip ours in our afternoon coffee.

Madeleines are French tea cakes with a distinctive shell-like shape, with stripes on one side and a typical “bump” on the other. They are thick, but also light, soft, and smooth in texture like a sponge cake. We had the most delicious orange Madeleines in Provence, France and these eggless Orange scented madeleines take inspiration from that.

There are a few types of madeleine pans available in the market. I purchased this classic madeleine pan from Amazon. I would suggest buying a set of 2 pans as you would at least make 24 madeleines at a time. 

Key steps to make Eggless Orange Scented Madeleines

The batter is slightly thicker than my normal cake batter.  Madeleines are denser in texture as compared to cakes, therefore the thicker batter.  But if you find the batter overly thick, add 1-2 tablespoons of water or additional orange juice to thin it out a bit.

Be sure not to overfill the madeleine cavities.  Measure out 1 tablespoon before adding it to the cavities.

Once all the cavities are filled, take a spoon and spread the batter to the edges.  This step is important since it is a thicker batter, and we want to ensure we get the full madeleine shape.

If you like your baked good less sweet, you can skip the 2 tablespoons of sugar. 

These madeleines have plenty of citrus flavor from the orange juice and zest in the recipe.  For a lighter citrus flavor, you can choose to skip the zest.  I have not tried to make it personally, but I suppose if you wish to make them unflavored, you can skip the juice and zest and replace it with milk.  If you do try it, let me know if it works! Our family loves the citrus flavors, so I haven’t had a chance to try it myself.

Ingredients

  • 1 1/4 cups All purpose flour

  • 1/2 teaspoon Baking soda

  • 1/2 teaspoon Baking powder

  • 1/8 teaspoon salt

  • 2 tablespoons sugar

  • 1/2 can Sweetened condensed milk (7-8 ounces)

  • 3/4 cup fresh orange juice

  • 1 tablespoon orange zest (see note)

  • 1/2 cup Unsalted butter, melted (113 grams)

Method

  • Pre-heat oven to 350 F. Grease 2 madeleine pans (24 cavities).
    In a large bowl add flour, baking soda, baking powder, salt and sugar. Mix the dry ingredients well to combine. Make a well in the dry ingredients and add orange juice, condensed milk, melted butter and orange zest. Mix well so no dry patches remain.
  • Add 1 heaping tablespoon of the mix to the greased cavities. Don’t overfill! Once all the cavities are filled, take a spoon and spread the batter to the edges.
  • Bake in the pre-heated oven for 15-16 minutes till you see the edges slightly brown. Remove and cool in the pan for 3-4 minutes and finish cooling off on a wire rack.
  • Once completely cooled, take confectioners sugar in a metal strainer and dust the madeleines with it lightly. This step is completely optional.
    Enjoy with a hot cup of tea of coffee!

Tips

  • While zesting the orange be sure to only zest the orange part and not the white pith.

    I meant the cup size for measuring the ingredients…is it 240ml or 250ml cup set…
