Chai Spiced Apple Cake (Vegan)

Ok, so here in Arizona it does not feel like it yet, but its officially Fall! So, to celebrate the changing weather and to feel the warmth and fuzziness, I present to you Vegan Chai Spiced Apple Cake.

This cake has the spices that go in a hot cup of masala (spices) chai (tea)- cinnamon, cloves, ginger and cardamom. Every family in India has their own blend of chai spices. My mother-in-law enjoys her cup of masala chai first thing in the morning and her spice blend includes equal portions of cinnamon, cloves, black pepper and cardamom.  I prefer ginger, so I included that instead of black pepper. 

These spices work really well with apples. As for the apples, I have used Granny Smith apples here. Granny Smith and Gala varieties do well in baking. While cutting the apples just make sure that they are no more than 1/2 inch dice.

I wanted to bake a bundt cake but you can easily half the recipe and bake it in a bread loaf pan. I have personally never baked this cake in a loaf pan so you will have to check on the baking times.

Vegan Apple Cake infused with warm chai spices

Ingredients

  • 2 1/2 cups All purpose Flour

  • 1 cup Sugar

  • 2 teaspoons Baking Soda

  • 1 teaspoon ground cinnamon

  • 1 teaspoon ground cloves

  • 1 teaspoon ground ginger

  • 1 teaspoon ground cardamom

  • 1/2 teaspoon salt

  • 1/2 cup any unflavored oil (I use avocado oil)

  • 1 3/4 cups unsweetened almond milk or any dairy-free milk

  • 2 teaspoons white vinegar

  • 1 flax egg (1 tbs flax meal + 2 tbs water)

  • 2 Granny smith apples, peeled, cored and cut into 1/2 inch dice

  • 1 tablespoon All purpose flour

Method

  • Pre-heat oven to 350 F. Prepare a baking pan by greasing and flouring.
  • Mix the flax egg with sugar, oil, almond milk, vinegar and keep aside.
  • In a separate bowl, sieve the flour, baking soda, all the spices and salt and mix well with a spoon. Add the wet ingredients to the dry ingredients and mix well till incorporated with no dry patches but do not overmix.
  • Combine the apples and the 1 tbsp flour until evenly coated. Add the apples to the cake batter until incorporated.
  • Pour the cake batter in the prepared baking pan and bake for 45-50 mins or until a toothpick inserted comes out clean. Take it out of the oven and rest it for 10 minutes before inverting it and cooling on a cookie sheet.

Tips

  • To make a non-vegan version, you can use regular milk instead of almond milk.
