Ok, so here in Arizona it does not feel like it yet, but its officially Fall! So, to celebrate the changing weather and to feel the warmth and fuzziness, I present to you Vegan Chai Spiced Apple Cake.
This cake has the spices that go in a hot cup of masala (spices) chai (tea)- cinnamon, cloves, ginger and cardamom. Every family in India has their own blend of chai spices. My mother-in-law enjoys her cup of masala chai first thing in the morning and her spice blend includes equal portions of cinnamon, cloves, black pepper and cardamom. I prefer ginger, so I included that instead of black pepper.
These spices work really well with apples. As for the apples, I have used Granny Smith apples here. Granny Smith and Gala varieties do well in baking. While cutting the apples just make sure that they are no more than 1/2 inch dice.
I wanted to bake a bundt cake but you can easily half the recipe and bake it in a bread loaf pan. I have personally never baked this cake in a loaf pan so you will have to check on the baking times.
Enjoy a slice of Vegan Chai Spiced Apple Cake with a hot cup of chai (tea) or coffee as you see the leaves change colors!
