My daughter is a huge Taylor Swift fan so of course she wanted me to try Taylor’s infamous Chai Spiced cookies. She would otherwise only eat chocolate treats but for the love of Taylor, she was ready to experiment with the chai flavors. As an Indian, I am a huge fan of chai spices, so of course I wanted to try an eggless version of the Chai Spiced Cookies. I also have a recipe for a delicious fall cake Chai Spiced Apple Cake.

I am not sure if you would serve these cookies with chai. Would it be too overpowering, or there is nothing like too much chai? You decide 😊

What spices go in the Chai spice blend?
Chai spice refers to a blend of aromatic spices commonly used in making chai, a traditional Indian tea. The word “chai” simply means “tea” in Hindi, and the blend of spices is an integral part of the flavorful chai experience. Every family in India has a blend of chai spices. My mother-in-law enjoys her cup of masala chai first thing in the morning and her spice blend includes equal portions of cinnamon, cloves, black pepper, and cardamom. I prefer ginger, so I included that instead of black pepper. Some chai spice blends also include fennel and nutmeg but in smaller quantities.
I would recommend making a small batch of chai spice with equal amounts of cinnamon, cloves, black pepper, cardamom, and ginger powders. Once you try this blend, you can adjust it based on your preference.
