I have a confession to make. I don’t like to eat fruit. However, I like anything made with fruits – desserts, salads, and just about anything. Eating fruit as part of overnight oats is the only way I will eat fruit for breakfast. So here is a quick and easy recipe for Blueberry Overnight oats.

Do I need to soak the oats overnight for this recipe?

Yes, soaking the oats in liquid overnight naturally softens them and eliminates the step of cooking them! It’s great for meal prep, where you can prepare a few jars and eat them for the next 3-4 days. The chia seeds in the compote naturally thicken it. It’s almost like eating blueberry jam with overnight oats. Honestly, I sometimes make smaller portions of this healthy vegan Blueberry overnight Oats and eat it as dessert/snack in the middle of the day.

Ingredients for the Blueberry Compote

  • 2 cups Fresh or Frozen blueberries
  • 1 tablespoon chia seeds
  • 1 tablespoon lemon juice
  • 1 tablespoon maple or Agave syrup
  • Pinch of salt

Ingredients for the Overnight Oats

  • 1 cup rolled Oats (not quick cooking)
  • 1 ¾ cup almond or any other dairy-free milk
  • 1 tablespoon chia seeds
  • 1 tablespoon maple or Agave syrup
  • 1 teaspoon vanilla extract (optional)
  • Extra blueberries and chopped nuts for garnish. (Optional)

How to make Blueberry Overnight Oats: Step-wise guide

Follow these steps to create this blueberry overnight oats recipe:

  • In a saucepan combine blueberries, lemon juice, maple or agave syrup, and salt. 
  • Stir to combine and bring to a boil stirring occasionally on medium heat. 
  • Break up some of the blueberries with the back of the ladle that you are using to stir. Continue to cook until the mixture thickens a bit about 5-6 minutes. 
  • Turn off the heat and stir in the chia seeds. Cool completely. The compote will thicken considerably.

  • In a bowl combine oats, almond milk, chia seeds, maple/agave syrup, and vanilla extract. Stir to combine. 
  • In separate glass jars, (6 small or 3 large) distribute the compote. Ladle the oats mixture on top.  Cover the glass jars and put them in the fridge for a minimum of 8 hours. They are good to eat after 8 hours or will keep in the fridge for 3-4 days. 
  • When ready to eat, top with additional berries and chopped nuts as desired.
